Plain Skyr
  • 200 g petit beurre biscuits
  • 80 g butter
  • 500 g plain skyr from Alsace Lait
  • 200 g fromage blanc
  • 100 g sugar
  • 3 eggs
  • 3 tbsp cornflour
  • 1 lemon

Preparation

  1. Crush the biscuits and mix with the melted butter. Press into the base of a springform pan and chill.
  2. Preheat the oven to 180°C. In a bowl, whisk the skyr with the fromage blanc, then add the sugar and eggs. Mix until smooth, then add the lemon juice and grated zest.
  3. Pour over the base and bake. Lower the oven temperature to 140°C and bake for about 50 minutes. Leave to cool in the switched-off oven, then chill for at least 6 hours.
  4. Decorate with lemon zest and crushed biscuits.
