- Crush the biscuits and mix with the melted butter. Press into the base of a springform pan and chill.
- Preheat the oven to 180°C. In a bowl, whisk the skyr with the fromage blanc, then add the sugar and eggs. Mix until smooth, then add the lemon juice and grated zest.
- Pour over the base and bake. Lower the oven temperature to 140°C and bake for about 50 minutes. Leave to cool in the switched-off oven, then chill for at least 6 hours.
- Decorate with lemon zest and crushed biscuits.
