In a blender, mix the strawberries and ALSACE LAIT bibeleskaes plain fromage blanc. Set aside in a mixing bowl.
Pour the sugar, water and organic lemon juice into a saucepan. Heat over a medium heat. Using a cooking thermometer, cook the syrup to 100°C.
Pour the syrup over the strawberry and fromage blanc mix, and whisk until well blended together.
Pour the mixture into ice cube trays. Freeze overnight.
The next day, place the strawberry cubes in a blender and blend for 1 minute at full power.
Serve the ice cream immediately.
