Spicy bibeleskaes sauce
Finely chop the bird's eye chillies, garlic, parsley and coriander, then heat them in the olive oil for a few minutes. Set aside to allow the spicy oil to infuse. In a bowl, mix 200 g of Alsace Lait bibeleskaes whole milk fromage blanc with the lemon juice. Season with salt and pepper.
Pitta dough
In a mixing bowl, mix the Alsace Lait bibeleskaes whole milk fromage blanc, honey and milk, then add the flour, baking powder and salt. Knead until you have a smooth dough. Add a little flour if necessary. Shape into a ball and leave the dough to rise for 1 hour at room temperature.
Cut the dough into four pieces, shape into four even balls, then roll them out with a rolling pin on a floured work surface until they are 1/2 cm thick. Melt the butter in a frying pan and cook the pittas over a low heat for 3 minutes, turning them halfway through. Set aside.
Toasted sesame seed eggs
Pour the sesame seeds into a non-stick frying pan and brown them for a few minutes. Break the eggs in separately and cook for 3 minutes over a medium heat.
Arrange the pitta breads on a plate, add a tablespoon of lemon Bibeleskaes and place a toasted sesame seed egg on top. Garnish with spicy oil and a pinch of fleur de sel. Sprinkle with parsley and chopped coriander.
