BREDELES (APPROXIMATELY 25 BISCUITS)
ICING
Preheat the oven to 180°C.
Put the flour, ALSACE LAIT highest-quality, unsalted butter, cut into pieces, caster sugar, baking powder, ground almonds, cinnamon, honey and eggs into the bowl of a food processor with a blade attachment. Mix until you have a smooth dough.
Place the dough on a lightly floured work surface and shape into a ball. Roll out the dough until it is about 1 cm thick.
Using pastry cutters of your choice, cut out shapes of pastry. Set aside on a baking tray lined with baking paper.
Bake the bredeles for 12 minutes. Place on a wire rack until completely cool.
Meanwhile, prepare the icing.
In a small mixing bowl, whisk together the icing sugar, lemon juice and egg white until smooth.
Pour the icing into a piping bag with a fine nozzle. Decorate the bredeles as you wish. Leave the icing to dry.
