Pour the Alsace Lait fresh semi-skimmed milk into a saucepan and heat over a low heat for 5 minutes. Add the pudding rice and cook for 20 minutes over a low heat, stirring regularly.
Pour in the sugar and vanilla sugar. Stir the rice pudding for 2 minutes.
Cut the nectarines into thin slices, pick a few sprigs of tarragon and set aside.
Melt 25 g of unsalted butter in a frying pan, add the nectarines and roast for 5 minutes over a medium heat. Add the sprigs of tarragon and honey, and continue cooking for a further 3 minutes.
Remove the pan from the heat and set aside.
To serve, pour the vanilla rice pudding into six bowls and add a few slices of nectarines roasted in honey and tarragon.
